Lunch - Yum!





Start with a non-stick pan, on medium heat.  The Teflon ones work the best.  Put 1/2 cup grated sharp cheddar cheese in the pan and cook for approximately 4 - 6 minutes until it turns brown.  Take the pan off the stove and let cool for 2 to 3 minutes. Repeat for 2nd cheese. (1/2 cup grated cheese)  The cheese will come out in one piece - this is also great for snacks!   Chop 2 cups lettuce mix, 2 slices of tomato from this mornings brunch, 2 tablespoons red onion, 1/2 avocado and set aside while you brown 1/2 of hamburger.  In a bowl-plate or a plate, put cheese wafer on the bottom, split the vegetables and hamburger on top of cheese wafer, add 1 tsp of sour cream and/or 1 jalapeno pepper.
