LATE ENTRY DAY 5: KETO JOURNEY

Breakfast was scrambled eggs, bacon, avocado and bacon.  Lunch we grabbed a "bacon-McDouble" asking for "No bread, no condiments" and an unsweetened iced tea.  Snack was some pork rinds.

Dinner was WONDERFUL!  Cod fillets with one lemon sliced in four wedges and squeeze over the cod fillets, thyme, pepper and sea salt.  Two tablespoons butter in a medium-high pan, add fillets (approximately 1 1/4" thick) and cook for seven to ten minutes each side until browned.  Eight ounces of greenbeans with crumbled bacon and a little butter on top steamed in a double boiler until tender.  

Later - while doing paperwork to get ready for the pre-op surgery appointment Tim brought in some Salumi Salami slices, Monterrey Jack and Pepper Jack cubes of cheese and a cup of hot tea.

This is a very short entry because this week has been hectic filled with diagnostic testing some trying times with the VA.  There are good people who work there but it drove it home when I was speaking to a doctor after screening and ultra sound and her comment on the Va was:  Well - you know it is free so the vets don't mind waiting".  It is a good thing that the encounter with the PC doctor at VA had taken all the strength to get through THAT appointment so I simply shut my mouth (which anyone who knows me knows that was a HUGE thing, shook my head and left). 

Tonight was a mix of clouds illuminated by the gold reflection of the sun lingering around the top edges of scattered clouds.  So many things to paint - so much to take in as well.  I am glad for the evening clouds over the mountains outside the living room window.  Each night I watch as clouds, reflected light and the mist in the valleys low on the mountains.  It is wonderful to be here -
